Forgotten Foods Foxtail Millet Soup

Forgotten Foods Foxtail millet soup is easy to prepare, delicious and you will really savour it during a chill weather.


Of course it comes along with a list of health benefits including immunity, weight loss & diabetes control since it’s made of Foxtail millet.


Forgotten Foxtail millet is a low GI ancient grain with high fibre content and good micronutients including Zinc.

Ingredients (serves 8 people)

Forgotten Foxtail millet – 1/2 cup
Moong Dal – 1/2 cup
Onion – 2 tsp
Tomato – 2 tsp
Green chillies – 3 pcs
Cumin (Jeera) – 1/2 tsp
Oil – 2 tsp
Salt
Pepper
Oregano
Lemon
Coriander
Pumpkin seeds (optional)
Water

 

Method

  1. Wash and clean 1 cup of Foxtail millet and pressure cook it with 2 cups of water.
  2. Chop the Onions, Tomatoes and Green chillies.
  3. Thoroughly mix the cooked millet with 1 cup of Moong dal, chopped veggies, cumin, salt, pepper, oil and 6 cups of water and pressure cook it for 4 whistles.
  4. After pressure cooking, squeeze and mix few drops of lemon and garnish it with coriander leaves, oregano, roasted pumpkin seeds and cream (optional).
