Here's a recipe of the forgotten Moringa leaves soup, a light and nutritious soup made by simmering moringa leaves with onions, garlic, pepper, and cumin seeds. This soup is widely known for its health benefits, such as boosting immunity and aiding digestion.

Ingredients:

  • 1 cup fresh moringa leaves, washed and chopped
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1 tsp black pepper powder (adjust to taste)
  • 1 small tomato, chopped (optional)
  • 1 tsp oil or ghee
  • 2 cups vegetable broth or water
  • Salt to taste
  • Fresh coriander for garnish (optional)

Instructions:

  1. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
  2. Add the chopped onion and garlic, sauté until they turn golden.
  3. If using, add the tomato and cook until soft.
  4. Add the moringa leaves and stir-fry for 1-2 minutes until they wilt slightly.
  5. Pour in the vegetable broth or water, and season with salt and pepper.
  6. Let the soup simmer for 8-10 minutes.
  7. Turn off the heat and garnish with fresh coriander if desired.
  8. Serve warm as a nourishing soup.
