A crunchy and savory snack, Millet Flakes Chivda is perfect for tea-time or as a healthy alternative to packaged snacks. Made with millet flakes, nuts, and spices, this recipe is both nutritious and irresistibly delicious.


Ingredients:

For the Base:

  • 2 cups kodo millet flakes (or ragi millet flakes)
  • 1/4 cup roasted peanuts
  • 1/4 cup roasted cashews (optional)
  • 2 tbsp roasted gram dal (dalia)

For Seasoning:

  • 1 tbsp oil or ghee
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A handful of curry leaves
  • 2 green chilies, chopped (optional, for spice)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder (optional)
  • 1/2 tsp sugar (optional, for a slight sweet touch)
  • Salt to taste

Optional Add-ins:

  • 2 tbsp raisins (for a sweet-savory twist)
  • Roasted Sesame seeds
  • Fried Garlic
  • A pinch of asafoetida (hing)

Instructions:

Step 1: Prepare the Millet Flakes

  1. Dry roast the millet flakes in a large pan on low heat for 3-4 minutes, stirring frequently, until they become crisp. Remove from the pan and set aside.

Step 2: Prepare the Seasoning

  1. Heat oil or ghee in the same pan. Add mustard seeds and let them splutter.
  2. Add cumin seeds, curry leaves, chopped green chilies, and asafoetida (if using). Sauté for 1-2 minutes until aromatic.
  3. Stir in turmeric powder, red chili powder, and sugar (if desired). Mix well.

Step 3: Combine and Roast

  1. Add the roasted peanuts, cashews, and gram dal to the pan. Stir-fry for 1-2 minutes to coat them with the spices.
  2. Lower the heat and add the roasted millet flakes to the pan. Gently mix everything to ensure the flakes are evenly coated with the seasoning.

Step 4: Final Touches

  1. Turn off the heat and mix in the raisins for a hint of sweetness. 
  2. Let the Chivda cool completely before transferring it to an airtight container. This ensures it stays crisp.
